Cindy Halasz: General Manager

“Bon vivant”
With 20 years experience in the hospitality industry, my career has allowed me to work with the finest establishments in Adelaide, Perth and Brisbane.
My love of fine food and excellent wine keeps me passionate about their evolution within our social spheres.
The Wine Underground gives me another opportunity in my business to deliver a diversity of style with cultural influence.
| John Gabel: Executive Chef

“Affectuous”
My cooking life began with cakes in the oven, dough on my hands and my grandmother’s caring guidance.
I have since advanced to running my successful restaurant and catering business.
Gastronomy is my life and with that I choose to drink as much French Champagne as I can.

Jeremy Shiell: Bistro/Bar Manager

I am Victorian. Now that that’s out of the way we’ll move on. In a case of reverse migration I came to Adelaide from Melbourne this winter (07) to experience what SA has to offer. Previously I’ve worked in restaurants, wine, music journalism, radio journalism and various other subversive activities.
In no particular order I enjoy Bruce Springsteen, SA and German Riesling, early ‘70’s soul music, cool climate Pinot Noir,
riding a bike and vintage champagne if someone else is paying.
| Arnaud Mallet: Head Chef

I am French.

Genevieve Prior: Restaurant and Functions Manager

I have worked in hospitality for almost 10 years and my background stems from the cafe and bar scene to formal dining.
I have recently moved back to Adelaide after being in Melbourne for eight years, where my professional background was in Corporate Sales and Marketing.
The Wine Underground offers me an opportunity to combine my passion of food and wine with other fun, creative and inspirational people. I have never been lost for words but finding an end to this blurb has proved me wrong!
| Dioni Pike: Head Chef

Passionate and creative
I have spent 13 years in pastry then furthered my career into all aspects of the kitchen as well as customer service with in different styles of restaurants.
I am country born and city bred.
My ultimate pleasure is entertaining my friends and family giving them new food experiences and sharing good times over a glass of red – particularly Barossa Shiraz or an aged Riesling.

Alex Worthington: Retail Sales Manager

I have 12 years of industry experience and a degree from Adelaide University; I rarely buy the same wine twice preferring to try something new or old world; Travelling and sport are my other two great passions having rowed at an international level and I am one eyed Australian. Among many mottos I encourage all to ‘enjoy yourselves’
